The leaders have to practice daily to perfect their skills, he says, and cooking on the line is like competing in a sporting event.
"There's a huge adrenaline rush on the line," said Rummel, 37. "It takes a lot of coordination and synchronization. It is a challenge to get the right orders and see them through. "
Rummel oversees the kitchens of two other Grills StonePepper, in Adams and Upper St. Clair.Best described as casual sophistication, appealing restaurants are the brainchild of owner Jeff Joyce, a longtime restaurateur who owned 1902 Pittsburgh Tavern Market Square for 26 years and Firewaters on the North Shore for 13 years.
"The company is based on four platforms popular food - the brick-oven pizzas, gourmet burgers, salads and pasta cut," said Joyce, an Upper St. Clair resident. "We use only quality ingredients and are moderately priced. We are not a sports bar, but we have sports programs on 17 TV screens in each StonePepper Grill."
Grill StonePepper is pleasing to the eye, with its mix of light wood and dark stone walls, spacious cabins and well sized tables. Former cover of Rolling Stone magazine hanging on the walls, and the huge granite bar in the shape of a U 32 stools around it. The interior of the restaurant has 240 seats, with 80 additional seats on the outdoor patio.
Joyce recycled many recipes that have been bestsellers at the 1902 Tavern Grill StonePepper extensive American menu. Rummel added a few recipes of his own, and chips menu with variety and creativity.
There are a whopping 13 chopped salads, including grilled-chicken caesar, apple-walnut chicken, blueberry pecan, lump crab and avocado, shrimp and artichoke, filet mignon and grilled salmon. Homemade soups include a creamy seafood bisque and a spicy Baja chicken with veggies.
